An Observation on the Amino Acid Content of Doen jang(Soy-bean paste)

Abstract
An observation was carried out on the amino acids content of "Doen-jang", a popular native pod that is a kind of soy-bean paste. The Spackman-Stein-Moore¢¥s method"" was employed ,for analysing ordinary amino acids but the Aldehyde method) was used for measuring I.ryptophan. The- data were shown in the Table 2, free amino acid content ..and Table total amino acid content in the Doen-jang.
The results obtained were summerized as follows:
1 The free amino acids weree occupied about one third portion of the total.
2. The subject material contained almost no threonine and proline.
3. Glutamic acid, glycine and methionine in the subject material were mostly free form.
4. The subject material contained certain amount of lysine.
